Zucchini Crêpes

This is the perfect summer dish. You need just a mixer, a frying pan and very few ingredients.


1 big zucchini (350 gr)
1 small onion (optional)
3 eggs
3 spoons of flour
extra virgin olive oil @anticofrantoioderitis
A pinch of salt


Cut the zucchini and the onion in pieces, put them in a mixer and blend until creamy. Add the eggs, flour and salt and blend until the batter is smooth.

Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the griddle. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crêpe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. With these ingredients, you can make 6 medium-sized crêpes.

Let it cool down and then fill them with the ingredients you like most.

We have choosen 2 combinations: ricotta and tomatoes with a drizzle of extra virgin olive oil @anticofrantoioderitis (the one with lemon flavor) and ricotta and prosciutto serrano.
