This Salmon Croquettes recipe is very simple to make… especially if you have some leftover mashed potatos. Crispy on the outside and so flavorful, these croquettes are perfect for an aperitivo under the sun, together with a cold glass of Italian wine!
If you don’t want to fry them, you can also bake the croquettes in the oven for 15 minutes at 180*.
INGREDIENTS
400 gr cooked salmon
400 gr mashed potatoes
6 tablespoon breadcrumbs (plus some more to bread them)
1 clove of garlic
1 egg
Salt and pepper
2 tablespoons extra virgin olive oil
a sprig of parsely
vegetable oil to fry
This is a great way to add more salmon to your diet. Plus: kids love them!
