Today Cristina shares with us a new recipe, perfect for a nice lunch or dinner: a succulent salmon fillet served over a bed of multicolor zucchini and carrots.
Ingredients for 2 people:
-2 salmon fillets (total 200gr)
-1 yellow zucchini
-1 green zucchini
-4 carrots
-Thyme, salt and pepper
Method:
Cut the vegetables in small strips. In a pan add 4 tablespoons of extra virgin olive oil and 1 chopped shallot. After 2 minutes add the veggies. Let them cook on high heat for 5/7 minutes (to make them crunchy). Season it with salt, pepper and thyme.
Meanwhile, heat a non- stick frying pan over high heat. Cook the salmon fillet on the skin side for 2/3 minutes or until it’s crispy. Turn it and cook it for another 5 minutes on medium heat (or until it’s cooked to your liking).
Serve the salmon fillet over a bed of multicolor vegetables.
