Valentine’s Risotto

For Valentine’s day we prepared this risotto with saffron, shrimps, burrata, confit tomatoes and pepper. It’s beautiful to see, creamy and spicy to taste and incredibly flavored… perfect to wake up your senses…

Did you know that saffron has been used in Indian and Persian healing for thousands of years?
It delivers numerous health benefits, aphrodisia being one of them. It is rumored that Cleopatra bathed in baths of milk and saffron.

Ingredients

200 gr Carnaroli or Arborio rice
1 white onion
1 bag saffron 0,10 gr (powder or threads) – 1 glass white wine
butter, olive oil, salt
pink pepper
10 fresh shrimps (bought at @venos_frankfurt
1 clove garlic 
1 burrata cheese
4 cherry tomatoes
oregano
2 leaves basil
To prepare the broth for risotto: 2 liters water, 1 tablespoon salt, 2 carrots, 1 potato, 1 onion
