Bursting with fresh blueberries with a tender crumb, these really are the best blueberry muffins. Incredibly moist and fluffy, you’ll fall in love with one bite!
250 gr flour
150 gr sugar
100 vegetable oil
150 ml milk
200 gr blueberries
16 gr baking powder
Break the eggs in a bowl and add the sugar, milk, vegetable oil and lemon zest. Mix all together.
Add the flour a bit at the time and then the baking powder.
Add the blueberries and mix very gently with a spatula.
Spoon the batter into a muffin tin lined with paper liners. (It’s important to use the liners, otherwise the blueberries will stick to the bottom of the pan, making the muffins difficult to remove.)
Bake at 180 degrees for about 20 min.
