Salmon Pockets

Are you looking for a tasty and elegant appetizer for your next dinner? These salmon pockets are the perfect solution!

1 salmon filet
1 zucchini
2 tablespoons soy sauce
1 teaspoon honey
extra virgin olive oil
sesame seeds
lemon zest

Cut the salmon filet in small pieces and let it marinate in the soy sauce, olive oil and honey for 30 minutes.

In the meantime cut the zucchini in thin slices and grill them. When the salmon is marinated, roll the pieces in the sesame seeds and cook them in a pan with some olive oil for 5 minutes.

Sprinkle the salmon with some lemon zest, and then roll one zucchini slice around each salmon piece. Serve it warm. We accompanied it with a lemon Mayo and an arugula salad.
