This delicious pasta with zucchini and cheese is ready in about 20 minutes and requires only a few ingredients. A simple recipe that turns plenty of zucchini into a perfect family meal.
INGREDIENTS
350 gr bucatini pasta
600 gr zucchini
150 gr provolone cheese
50 gr Parmesan cheese
Garlic
Vegetable oil (to fry the zucchini)
Extra virgin olive oil @anticofrantoioderitis
Salt
Pepper
Fresh mint
METHOD
Cut the zucchini in thin slices and deep-fry them. Grate the provolone and Parmesan cheese and set them aside.
Start cooking the pasta in boiling salted water.
In a pan, add 4 tablespoons of extra virgin olive oil together with the garlic. Add the fried zucchini and the pasta 5 min before is ready with one ladle of cooking water.
Now it’s time to add all the grated cheese. Mix vigorously and, if needed, add a bit more cooking water until the pasta is cooked al dente.
As a final touch, add salt, pepper and mint.
Enjoy it with a glass of white wine
